Thanks for the response. When you mention backup&restore, are you referring to backing up and restoring the two VMs only? If so, Would you use something like Veeam? Also, when you say "remove the ESXi host from vCenter, replace the disks, update the firmware, re-install ESXi" are you suggesting completely reinstalling ESXi onto the flash drive once the new RAID array has been built? I wanted to be able to put the old drives back into the server as a last resort if something were to happen during the upgrade process. Would the process you're suggesting make this problematic?
